Available from April to early June, asparagus are the young shoots of a cultivated lily plant. They’re considered one of the delicacies of the vegetable world, with a very distinct, intense savory flavor. Asparagus can be purple, green or white. All types of asparagus pack a nutritional punch, with high levels of vitamin A and C, potassium, iron and calcium, and are a potent diuretic.
